1 cup whole wheat flour
1 package yeast
1 tablespoon honey
1 cup unbleached white flour
1 cup chicken broth
In a large bowl, combine wheat flour, yeast, honey and 2/3 cup broth. Beat for 3 minutes. Slowly add remaining flour. Knead the dough until it is smooth and moist, not wet. Use the rest of the broth to moisten as necessary.
Cover dough for 5 minutes. Make 15 to 20 balls and poke a hole in the center of each. Allow
Place on a cookie sheet lined with parchment paper and allow bagels to rise for 5 minutes. Bake at 375* for 25 minutes, or until light brown. Turn the heat off and allow the bagels to cool in the oven.
