Great Grandma’s Cranberry Sauce

Ingredients:
1 12-ounce bag cranberries
1 cup sugar
1 cup water
2 boxes raspberry jello
1 large apple, chopped
2 large oranges, peeled, sectioned and de-veined if necessary
1 cup nuts

Directions:
Mix all together, let set for 24 hours. Will last for 2 weeks.

Chili Sauce

Ingredients:
20 large ripe tomatoes cut small
6 large onions cut small
3 large green peppers cut small
3 tablespoons salt
3 cups brown sugar ~or~ 2 cups white and 1 cup brown
1/2 teaspoon cloves
2 teaspoons cinnamon
6 cups vinegar

Directions:
Wash and peel tomatoes. Peel onions and wash green peppers. Dice all (cut small).
Boil 1 1/2 hours. Makes 9 pints.

This was in Tracy Fuller’s collection with a title of “Mom Gregg’s Chile Sauce”.  I’m presuming that Mom Gregg is Aunt Thelma Gregg’s mother in law. Thanks Mom Gregg!!

Italian Spaghetti Sauce

Ingredients:
2 tablespoons olive oil
4 medium onions, diced
3 stalks celery, sliced
4 cloves garlic, chopped or sliced1 cup mushrooms, sliced
3 pounds ground beef
3 cans tomato paste
3 cans water*
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
pinch of red pepper

Directions:
Place first 7 ingredients in large pot and brown. Drain.
Add remaining ingredients and simmer for hours.

This is from “Grandpa” Everett Fuller. He obtained it back in the old days from a little old lady from Italy.

*I have always added more water, closer to 8-9 cans.

Cream of Celery, Mushroom or Onion

Ingredients:
2 tablespoons butter
1/4 cup finely chopped celery, mushroom or onion
2 tablespoons flour
1/4 teaspoon salt (optional)
1 cup milk

Directions:
In a heavy saucepan, melt the butter. Saute celery, mushroom or onion. Sprinkle the flour over it and stir to incorporate. Cook over medium-low heat for 2-3 minutes, stirring constantly. Slowly whisk in milk.

Cream of Cheddar Cheese

Ingredients:
2 tablespoons butter
2 tablespoons flour
1/4 teaspoon salt (optional)
1 cup milk
1/2 to 1 cup shredded cheddar cheese

Directions:
In a heavy saucepan, melt the butter. Sprinkle the flour over it and stir to incorporate. Cook over medium-low heat for 2-3 minutes, stirring constantly. Slowly whisk in milk. Add cheese and stir until melted.

1/2 cup chicken broth

Directions:
In a heavy saucepan, melt the butter. Sprinkle the flour over it and stir to incorporate. Cook over medium-low heat for 2-3 minutes, stirring constantly. Slowly whisk in broth, then milk.

Crazy Hot Dog Sauce

Ingredients:
1/2 cup mayonnaise
2 tablespoons ketchup
Louisiana Hot Sauce to taste

Directions:
Mix all in a bowl until smooth. Taste and adjust ingredients to suit your taste.
Terrific on Hot Dogs (with shredded lettuce, chopped tomato and chopped onion)!!
Used as a french fry dip too, so get creative!!

Fajita Seasoning Mix

Ingredients:
1 tablespoon cornstarch
2 teaspoons chili powder
1/2 teaspoon salt*
1 teaspoon paprika
1 teaspoon white sugar
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon cayenne pepper
1/2 teaspoon ground cumin

Directions:
Stir all ingredients in a bowl with a lid or into a zipper-type sandwich bag.
Keeps a long time!
Terrific in everything from ground beef tacos to grilled chicken fajita salad!
