Cream of Celery, Mushroom or Onion ~ White Gravy ~ SOS
I found this fabulous recipe at Budget101.com, but the site now reflects an updated version. The recipe below is from their original publication many years ago.

Cream of Anything Soup
As basic white gravy, cream of mushroom, celery or onion soup or even SOS.

Ingredients
- 2 Tbsp butter
- ¼ cup celery, mushroom or onion, finely chopped --*if using
- 2 Tbsp flour
- ¼ tsp salt --optional
- 1 cup milk
Instructions
- In a heavy saucepan, melt the butter.
- Sauté celery, mushroom or onion, if using.
- Sprinkle the flour over it and stir to incorporate.
- Cook over medium-low heat for 2-3 minutes, whisking constantly.
- Slowly whisk in milk, simmer until desired consistency, stirring occasionally.
Notes
For White Gravy, omit vegetables and add salt and black pepper to taste. Fresh ground black pepper is terrific.
If it is too thin to suit you, use a little more flour or a little less milk. For SOS, add chopped meat (like this Carl Budding) after sauce thickens. Heat thru. If you haven't heard of SOS, it is a concoction of meat and gravy served over toast referred to as Creamed Chipped Beef on Toast or "Sh*t On the Shingle".
I remember my dad making this. Us kids loved it! My children love it!
Green beans make a good side dish for this down-home comfort meal.
