Cream of Soup (Basic)

I found this fabulous recipe at Budget101.com, but the site now reflects an updated version. The recipe below is from their original publication many years ago.

Cream of Soup (Basic)

Ingredients

  • 2 Tbsp butter
  • 2 Tbsp flour
  • ¼ tsp salt --optional
  • 1 cup milk

Instructions

  • In a heavy saucepan, melt the butter.
  • Sprinkle the flour over butter and stir to incorporate.
  • Cook over medium-low heat for 2-3 minutes, whisking constantly.
  • Slowly whisk in milk, simmer until desired consistency, stirring occasionally.
