Cream of Chicken Soup

Cream of Chicken Soup

A delicious way to use up leftover chicken.

  • 2 Tbsp butter
  • 2 Tbsp flour
  • ¼ tsp salt --optional
  • ½ cup milk
  • ½ cup chicken broth --or ½ bullion cube dissolved in ½ cup hot water


  • In a heavy saucepan, melt the butter.
  • Sprinkle the flour over it and stir to incorporate.
  • Cook over medium-low heat for 2-3 minutes, whisking constantly.
  • Slowly whisk in milk and chicken broth, simmer until desired consistency, stirring occasionally.
  • Add cooked chicken and warm thru.
